Bangkok JAZZ (Thai)
The modern space - with its timber and brick decor, and campy soundtrack of Re'nee Olstead and Basia - gives little hint of its Thai provenance. But the breezy menu, dotted with snapshots of Bangkok, dishes out quickly cooked and delicious staples. Start with a pomelo salad tossed with chilli and dry shrimp or the fried discs of fish cakes sprinkled with fried basil leaves. Tender chunks of curry-marinated chicken are charcoaled in pandan leaves, while the sweet, thick gravy of the massaman curry has tender chunks of beef and potato. Wash it all down with a tall glass of lemongrass tea or a bottle of Singha to give you the feel of Bangkok far from home. Expect Filipino staples at this joint, every dish cooked with fidelity for a clientele of expats. The inasal na manok is grilled to a mahogany char, its flesh sweetened by a marinade of garlic, lemongrass, calamansi, coconut vinegar and ginger, and its skin basted with annatto oil (a peppery, sweet infusion of annatto, a Filipino spice), bay leaves and garlic. The ensaladang talong is particularly outstanding; wondrously smoky strips of grilled brinjal, drenched with a mix of sharp coconut vinegar and raw crushed garlic. Food Republic (Asian)
The 30-stall food court has been kitted out with early twentieth-century memorabilia, such as a Chinese sedan chair and hawker pushcarts. The draw is the galaxy of well-known hawkers, including the stunning Depot Road Zhen Shan Mei Laksa (made one clay pot at a time), Lau Di Fang and Scissors-cut Curry Rice (still going strong after 70 years).
